  • 2 tbsps browned butter (reserved)
  • 1 tbsp apple cider (regular, not reduced)
  • 2 ½ tbsps apple cider (regular, for glaze)

Instructions

  1. Transform butter into a golden-amber hue by simmering in a medium pan over medium heat until milk solids caramelize. Remove from heat, separate 1 cup for dough and 2 tablespoons for later, then cool completely.
  2. Concentrate apple cider in a saucepan, reducing from 1 cup to ¼ cup over medium heat in approximately 15 minutes. Allow to cool to room temperature.
  3. Create a uniform dry mixture by sifting flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a medium bowl.
  4. Whisk cooled browned butter with reduced cider, sugars, vanilla, egg, and apple sauce until thoroughly integrated and smooth.
  5. Gently incorporate dry ingredients into wet mixture using a rubber spatula, mixing until just combined to maintain a tender cookie texture.
  6. Heat oven to 350°F and line two baking sheets with parchment paper.
