Instructions
- Preheat the oven to 350°F and thoroughly grease a 24-cup mini-muffin tin to ensure easy removal of the bites after baking.
- In a medium pan over medium-high heat, melt butter and combine diced apples with cinnamon, nutmeg, brown sugar, and water. Cook 4-6 minutes until apples soften slightly.
- Create a cornstarch slurry by mixing cornstarch with water in a small dish. Pour into the apple mixture, stirring continuously until the filling thickens and apples become tender, approximately 4-5 minutes. Let the mixture cool completely.
- Combine flour, rolled oats, and brown sugar in a large bowl. Cut softened butter into the dry ingredients using a pastry cutter until the mixture resembles coarse crumbs.
- Distribute a heaping tablespoon of crust mixture into each muffin cup, pressing firmly to create a cup-like shell along the bottom and sides. Set aside remaining crust mixture.
- Carefully spoon about 1 tablespoon of apple filling into each crust cup. Sprinkle the reserved crust mixture over the top of each filled cup.
- Bake in the preheated oven for 15-20 minutes, or until the bites turn a rich golden brown color.
- Remove from oven and let the bites cool in the tin for 10 minutes. Gently loosen with a knife and transfer to a serving plate. Optional: Drizzle with caramel topping before serving.
