Instructions

  1. Preheat the oven to 350°F and thoroughly grease a 24-cup mini-muffin tin to ensure easy removal of the bites after baking.
  2. In a medium pan over medium-high heat, melt butter and combine diced apples with cinnamon, nutmeg, brown sugar, and water. Cook 4-6 minutes until apples soften slightly.
  3. Create a cornstarch slurry by mixing cornstarch with water in a small dish. Pour into the apple mixture, stirring continuously until the filling thickens and apples become tender, approximately 4-5 minutes. Let the mixture cool completely.
  4. Combine flour, rolled oats, and brown sugar in a large bowl. Cut softened butter into the dry ingredients using a pastry cutter until the mixture resembles coarse crumbs.
  5. Distribute a heaping tablespoon of crust mixture into each muffin cup, pressing firmly to create a cup-like shell along the bottom and sides. Set aside remaining crust mixture.
