Ingredients
Scale
- 2 boneless (skinless chicken breasts) (approximately 1.5 lb/680 g, cut into 1-inch cubes)
- 3/4 cup (180 ml) mayonnaise
- 1/2 cup (120 ml) sweet chili sauce
- 1/4 cup (60 ml) sour cream
- 1 tsp kosher salt
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp dry mustard powder
- 1 tsp onion powder
- 1/2 tsp ground black pepper
- 2 tbsps honey
- 2 tsps hot sauce (Frank’s sauce recommended)
Instructions
- Soak wooden skewers in water for 30 minutes to prevent charring during grilling.
- Whisk mayonnaise, sweet chili sauce, sour cream, honey, and hot sauce in a bowl until smooth. Refrigerate sauce until needed.
- Season chicken pieces with kosher salt, smoked paprika, garlic powder, dry mustard powder, onion powder, and black pepper. Ensure even coating by tossing thoroughly.
- Thread six chicken pieces onto each skewer, preparing for grilling.
- Separate 1/4 cup of Bang Bang sauce into a clean bowl to prevent cross-contamination. This portion will be used for basting raw chicken.
- Brush skewers completely with separated sauce. Chill in refrigerator for 30 minutes to 2 hours, covering with plastic wrap if marinating overnight.
- Heat grill to 400-425°F. Arrange skewers on grill, cooking 4 minutes per side. Check chicken’s internal temperature, ensuring it reaches 165°F. Add 2-4 minutes cooking time if chicken appears undercooked or pink.
- Remove skewers from grill. Plate immediately with remaining Bang Bang sauce for dipping.
Notes
- Prevent wooden skewers from burning by soaking them in water for 30 minutes before grilling, ensuring even cooking and preventing potential charring.
- Create a flavorful, tangy sauce by mixing mayonnaise, sweet chili sauce, sour cream, honey, and hot sauce, allowing ingredients to blend thoroughly for maximum taste complexity.
- Ensure even seasoning by using hands or utensils to coat chicken pieces completely, guaranteeing each bite is packed with smoky, savory flavors from the spice blend.
- Keep food safety a priority by using separate sauce portions for brushing raw chicken and serving, avoiding cross-contamination and maintaining a hygienic cooking process.
