Description

Hearty chicken gloria casserole brings comfort to dinner tables with creamy, rich layers of chicken and cheese. Midwestern home cooks cherish this classic dish that satisfies hunger and warms hearts.

Ingredients

Scale
  • 3 chicken breasts (boneless and skinless, longitudinally halved)
  • 6 slices of Swiss or Muenster cheese
  • 1 can (18 oz / 510 g cream of mushroom soup)
  • 1/2 cup (120 ml) sherry wine
  • 8 oz (226 g) mushrooms (thinly sliced)
  • 1/3 cup (40 g) all-purpose flour
  • 3 tbsps olive oil
  • 2 tbsps unsalted butter
  • 2 tbsps freshly chopped parsley (for garnishing)
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)

Instructions

  1. Preheat oven to 350°F and prepare a 9×13-inch baking dish with light grease or parchment paper.
  2. Season chicken breasts with salt and pepper, then coat evenly with flour, shaking off excess.
  3. Heat olive oil in a skillet over medium heat and brown chicken on both sides without fully cooking.
  4. In the same skillet, increase heat and melt butter, then sauté mushrooms until golden brown.
  5. Deglaze pan with sherry wine, allowing it to reduce for 1-2 minutes.
  6. Incorporate cream of mushroom soup into the mushroom mixture, stirring until uniformly heated.
  7. Arrange browned chicken in the prepared baking dish and pour mushroom sauce evenly over the top.
  8. Layer cheese slices across the sauced chicken.
  9. Cover dish with aluminum foil and bake for 30 minutes.
  10. Remove foil and broil for 1-2 minutes until cheese becomes bubbly and lightly browned.
  11. Let casserole rest for 5 minutes after removing from oven.
  12. Garnish with fresh chopped parsley before serving to add color and bright flavor.

Notes

  • Use a shallow dish or plate for easy and even flour dredging, ensuring a light, crisp exterior on the chicken.
  • Choose cremini or button mushrooms for a classic flavor, or experiment with wild mushrooms like shiitake for a more complex taste profile.
  • Swap Swiss cheese with provolone or mozzarella for a different melting texture and flavor depth.
  • Prepare the casserole up to the point of baking, cover, and refrigerate for up to 24 hours, allowing flavors to meld and making meal prep easier.
