Ingredients
Scale
- 5 large eggs
- 1 large egg white
- 1 1/4 cups (296 ml) low-fat milk
- 1 package (5 to 6 oz or 142 to 170 g) fresh spinach
- 1 cup (4 oz or 113 g) shredded cheddar or cheddar jack cheese blend
- 4 slices thick-cut bacon (finely diced)
- 1/2 cup (75 g) onion (finely chopped)
- 1/4 cup (30 g) all-purpose flour
- 3/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp onion powder
- 1 pinch dried oregano leaves
- 1 pinch sweet paprika (optional)
Instructions
- Warm the oven to 350°F. Coat an 8-inch square baking dish with non-stick spray or butter to prevent sticking.
- Render bacon in a skillet over medium heat until crispy. Remove bacon and drain on paper towels, reserving 1 teaspoon of bacon grease.
- Sauté chopped onions in the reserved bacon grease until translucent and soft.
- Add fresh spinach to the skillet, stirring continuously until leaves wilt and excess moisture evaporates completely.
- Spread the spinach and onion mixture evenly across the prepared baking dish. Distribute crispy bacon pieces uniformly, then cover with shredded cheese.
- Whisk milk and flour together in a separate bowl until smooth and lump-free.
- Incorporate eggs and egg white into the milk mixture. Season with black pepper, salt, onion powder, and dried oregano. Mix thoroughly.
- Gently pour the seasoned egg mixture over the layered spinach, bacon, and cheese. Optional: Dust with sweet paprika for enhanced visual appeal.
- Bake in the preheated oven for 30-40 minutes until the quiche sets firmly and develops a golden surface.
Notes
- Make sure to drain bacon thoroughly to prevent excess grease and maintain a crisp texture.
- Use fresh spinach for the best flavor and nutrition, avoiding frozen or canned alternatives.
- Remove moisture from spinach by cooking and stirring to prevent a watery quiche consistency.
- Customize protein options by substituting bacon with turkey bacon or omitting for a vegetarian version.
