Description

Comfort reaches new heights with this easy chicken noodle casserole, blending creamy textures and hearty ingredients. Homemade goodness provides warmth you’ll savor with each delicious bite.

Ingredients

Scale
  • 3 to 4 boneless, skinless chicken breasts (453 to 680 g)
  • 2 cups shredded cheese (cheddar and mozzarella)
  • 8 oz (226 g) wide egg noodles
  • 2 cups (480 ml) frozen mixed vegetables (peas and carrots)
  • 1 can cream of chicken soup
  • 1 cup (240 ml) sour cream
  • 1 cup (240 ml) low-sodium chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Heat oven to 350°F, preparing a 9×13-inch baking dish with cooking spray.
  2. Boil egg noodles in salted water until tender, approximately 8 minutes, then thoroughly drain.
  3. Season chicken breasts with salt and pepper, then sauté in skillet over medium heat until golden and internal temperature reaches 165°F, roughly 6-7 minutes per side.
  4. Allow chicken to rest for 3-4 minutes, then shred using two forks into bite-sized pieces.
  5. Mix shredded chicken, cooked noodles, cream of chicken soup, sour cream, frozen vegetables, garlic powder, and onion powder in a large mixing bowl.
  6. Fold in half of the shredded cheese, ensuring ingredients are evenly distributed.
  7. Transfer mixture to prepared baking dish, spreading contents uniformly.
  8. Sprinkle remaining cheese across the top of the casserole.
  9. Bake uncovered for 30-35 minutes until cheese melts and edges turn golden brown.
  10. Remove from oven and let casserole rest 5-10 minutes to set before serving.

Notes

  • Swap frozen vegetables with fresh seasonal veggies for enhanced nutrition and vibrant color.
  • Use rotisserie chicken as a quick time-saving alternative to cooking chicken breasts from scratch.
  • Create a gluten-free version by replacing egg noodles with gluten-free pasta and using a gluten-free cream of chicken soup.
  • Add extra crunch by sprinkling breadcrumbs or crushed crackers on top before baking for a delightful textural contrast.
