Description

Delicate mini raspberry almond tarts showcase French patisserie elegance with buttery pastry and luscious fruit. Sweet almonds and fresh raspberries create a delightful dessert you’ll savor with pure culinary pleasure.

Ingredients

Scale
  • 1/2 cup unsalted butter (cubed)
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/3 cup granulated sugar
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup raspberry jam or preserves
  • powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F and line a mini muffin pan with paper liners for easy removal.
  2. Combine all-purpose flour, almond flour, sugar, baking powder, and salt in a food processor. Add cubed butter, vanilla, and almond extracts to the dry ingredients.
  3. Pulse the mixture until it forms a cohesive dough, then transfer to a clean surface.
  4. Gently knead the dough until smooth. Use a small cookie scoop to create uniform dough balls, rolling them into perfect spheres and placing them in the prepared liners.
  5. Create a 1/4-inch deep indentation in each dough ball using the end of a wooden spoon to prepare for the raspberry preserves.
  6. Transfer raspberry preserves to a zip-top bag, cut a small corner, and carefully pipe the preserves into the dough indentations.
  7. Bake for 13-15 minutes until the tarts turn golden brown and set completely.
  8. Cool the tarts in the pan for 20 minutes to prevent crumbling during removal.
  9. Use a butter knife to carefully lift the tarts from the pan. Dust with powdered sugar for an elegant finish.
  10. Store in an airtight container to maintain freshness for up to five days.

Notes

  • Swap all-purpose flour with a gluten-free blend to make these tarts suitable for those with gluten sensitivities.
  • Use an oven thermometer to ensure accurate baking temperature, preventing under or over-baking.
  • Experiment with different fruit preserves like apricot or blueberry to create unique flavor combinations.
  • Prepare the dough in advance and refrigerate for up to 2 days, allowing for quick assembly when ready to bake.
