Ingredients
Scale
- 4 pork chops (thick-cut, bone-in or boneless)
- 2 cups (480 ml) beef broth
- 1 cup (185 g) uncooked long grain white rice
- 1 10.5 oz (298 g) can condensed cream of mushroom soup (undiluted)
- 1 1 oz (28 g) packet Lipton Onion Soup & Dip Mix
- 1/4 tsp garlic powder
- 1/4 tsp dried chives
- 1/4 tsp onion powder
- Chopped fresh parsley or basil (optional)
Instructions
- Preheat oven to 350°F and lightly coat a 9 x 13-inch baking dish with cooking spray.
- Create a creamy rice base by whisking together condensed mushroom soup, beef broth, uncooked rice, garlic powder, dried chives, and onion powder until smooth. Pour mixture into prepared baking dish.
- Thoroughly dry pork chops with paper towels and arrange them directly on top of the rice mixture. Generously sprinkle Lipton Onion Soup & Dip Mix over the pork chops, adjusting quantity for desired flavor intensity.
- Securely cover the baking dish with aluminum foil and bake for 30 minutes. Verify pork chops have reached an internal temperature of 145°F. Remove pork chops, tent with foil, and let rest.
- Gently stir rice mixture, re-cover with foil, and continue baking for an additional 25-30 minutes until rice becomes tender and liquid is mostly absorbed.
- Fluff rice with a fork, plate alongside rested pork chops, and optionally garnish with fresh chopped parsley or basil for added brightness.
Notes
- Swap white rice for brown rice to boost nutritional value and add a nutty flavor profile.
- Reduce sodium by using low-sodium broth and only half the seasoning packet for a lighter taste.
- Ensure pork chops remain juicy by not overcooking; use a meat thermometer to check internal temperature precisely.
- Create a gluten-free version by selecting gluten-free cream of mushroom soup and checking seasoning packet ingredients.
