Description

Southern comfort shines in this hearty pork chops & rice casserole, blending tender meat with creamy rice. Savory seasonings and simple ingredients create a satisfying meal that invites you to gather around the table and enjoy home-style cooking.

Ingredients

Scale
  • 4 pork chops (thick-cut, bone-in or boneless)
  • 2 cups (480 ml) beef broth
  • 1 cup (185 g) uncooked long grain white rice
  • 1 10.5 oz (298 g) can condensed cream of mushroom soup (undiluted)
  • 1 1 oz (28 g) packet Lipton Onion Soup & Dip Mix
  • 1/4 tsp garlic powder
  • 1/4 tsp dried chives
  • 1/4 tsp onion powder
  • Chopped fresh parsley or basil (optional)

Instructions

  1. Preheat oven to 350°F and lightly coat a 9 x 13-inch baking dish with cooking spray.
  2. Create a creamy rice base by whisking together condensed mushroom soup, beef broth, uncooked rice, garlic powder, dried chives, and onion powder until smooth. Pour mixture into prepared baking dish.
  3. Thoroughly dry pork chops with paper towels and arrange them directly on top of the rice mixture. Generously sprinkle Lipton Onion Soup & Dip Mix over the pork chops, adjusting quantity for desired flavor intensity.
  4. Securely cover the baking dish with aluminum foil and bake for 30 minutes. Verify pork chops have reached an internal temperature of 145°F. Remove pork chops, tent with foil, and let rest.
  5. Gently stir rice mixture, re-cover with foil, and continue baking for an additional 25-30 minutes until rice becomes tender and liquid is mostly absorbed.
  6. Fluff rice with a fork, plate alongside rested pork chops, and optionally garnish with fresh chopped parsley or basil for added brightness.

Notes

  • Swap white rice for brown rice to boost nutritional value and add a nutty flavor profile.
  • Reduce sodium by using low-sodium broth and only half the seasoning packet for a lighter taste.
  • Ensure pork chops remain juicy by not overcooking; use a meat thermometer to check internal temperature precisely.
  • Create a gluten-free version by selecting gluten-free cream of mushroom soup and checking seasoning packet ingredients.
