Instructions
- Roast salmon at 425˚F on a parchment-lined baking sheet for 10-15 minutes until fully cooked. Drizzle with olive oil and season with garlic salt and black pepper. Let rest covered with foil for 10 minutes, then carefully flake fish using two forks, removing skin and bones.
- Sauté diced onions and bell peppers in olive oil and butter over medium heat until golden and tender, approximately 7-9 minutes. Remove from heat and let cool slightly.
- Combine flaked salmon with sautéed vegetables, bread crumbs, eggs, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and chopped parsley in a large mixing bowl. Mix thoroughly until ingredients are evenly distributed.
- Shape mixture into compact patties approximately 2 inches wide and 1/3 inch thick using hands, ensuring uniform size and consistency.
- Heat non-stick skillet with oil and butter over medium temperature. Carefully place patties in pan, cooking 3-4 minutes per side until exterior develops golden-brown crust and interior remains moist.
- Transfer cooked salmon patties to paper towel-lined plate to absorb excess oil. Repeat cooking process with remaining patties, adjusting heat if browning occurs too quickly.
