Scale
Main Ingredients:
- 1 sheet puff pastry
- 2 cups (475 ml) fresh spinach, chopped
- 1 cup (240 ml) ricotta cheese
- 1/2 cup (120 ml) crumbled feta cheese
- 1/4 cup (60 ml) grated Parmesan cheese
Herbs and Seasonings:
- 1 small onion
- 2 cloves garlic
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (5 ml) dried dill
- 1/2 teaspoon (2.5 ml) salt
- 1/4 teaspoon (1.25 ml) black pepper
- 1/4 teaspoon (1.25 ml) red pepper flakes
Egg Wash and Topping:
- 1 large egg
- 1 tablespoon (15 ml) water
- Sesame seeds
Instructions
- Prepare a baking sheet by lining it with parchment paper and heat the oven to 375F (190C).
- Sauté chopped onions and minced garlic in olive oil over medium heat until translucent and aromatic. Add spinach and cook until completely wilted, then remove from heat and allow to cool slightly.
- Blend ricotta, feta, and Parmesan cheeses in a mixing bowl. Incorporate dill, salt, pepper, and red pepper flakes. Fold in the cooled spinach mixture until thoroughly combined.
- Unroll the puff pastry and slice into 4-inch squares. Deposit a generous spoonful of spinach-cheese filling in the center of each square.
- Create triangular or pocket-style pastries by folding the edges and crimping with a fork to seal the filling securely.
- Whisk egg with water to create a wash. Generously brush the pastry surfaces, then optionally sprinkle with sesame seeds for added texture.
- Arrange pastries on the prepared baking sheet, ensuring they are not touching. Bake for 22-25 minutes until achieving a deep golden-brown color and puffy texture.
- Remove from oven and let rest for 5-7 minutes to allow filling to set. Serve warm as an elegant appetizer or light meal.
Notes
- Customize the filling by swapping spinach with kale, swiss chard, or other leafy greens for variety and nutrition.
- Experiment with different cheese combinations like goat cheese, blue cheese, or mozzarella to create unique flavor profiles.
- Make these pastries vegetarian-friendly by using plant-based puff pastry and dairy-free cheese alternatives for a delicious dietary adaptation.
- Prep these pastries ahead of time by assembling and freezing unbaked, then baking directly from frozen with a few extra minutes of cooking time.
